“East Tennessee Big Orange” Cake recipe!!!

By popular demand, here is the recipe for this incredible cake!

We have previously given out this recipe at conferences, and everyone says that it is AWESOME!

“East Tennessee Big Orange” Cake

1 yellow cake mix
11 oz. can mandarin oranges (do not drain)
½ cup oil
4 eggs
Orange food coloring (use desired amount)
12 oz. Cool Whip
1 small package instant vanilla pudding
20 oz. can crushed pineapple (drained)

Combine the first 5 ingredients to make the cake batter. Pour batter into two lightly greased 9 inch round pans or one 13X9 inch pan. Bake at 325 degrees for 20-25 minutes or until done (check this by inserting a toothpick into the center, in the toothpick comes out clean the cake is done). Cool cake in pans about 10 minutes, then cool completely on wire racks.

Mix the last 3 ingredients to make the frosting while the cake is cooling, then refrigerate the frosting. Once the cake has cooled completely, frost the layers. Decorate with candied orange slices or as desired.
